The most famous of the Sardinian red vines has existed on the island since the fourteenth century A.C. With a great ability to adapt to different pedoclimatic conditions, it gives wines of different characteristics, mainly related to the soil. Of medium-high vigor and medium-sized tight cluster, it is subject to the casting of flowers and berries. The berry has a thin, purple-black skin. The low resistance to cryptogams makes it very sensitive to powdery mildew and downy mildew. The ripening of the fruit takes place in the third-fourth decade of September.
TASTING NOTES
Bright and intense ruby red with garnet reflections, with delicate aromas ranging from violet to rose, to red fruits, to notes of aromatic herbs. In the mouth it is soft in attack, savory and round,
tasty with aromas of fresh berries and supported by a good acidic boost that gives freshness and ease of drink.
Alcohol: 13,00% vol.
Serving Temperature: 16-18° C.
IT’S BEST ENJOYED WITH…
It is a cannonau appreciated for its pleasant drink and for its softness. Good companion of cold cuts in the aperitif, first and pizzas with tomato sauce and meat dressings, pies with cheeses and
vegetables, grilled red meats, sheep cheeses and semi-aged vaccines.
THE VINEYARDS OF NERO SARDO
Vineyards of medium hill in the area surrounding Mogoro. The soil is calcareous clay, of good structure and depth. The climate is Mediterranean with mild winters and warm summers.
Average annual rainfall 500mm. The harvest takes place in the last decade of September. The yield per hectare is 60/70q.
VINIFICATION AND AGING
The vinification takes place with a fermentation maceration of about 10 days at a temperature of 24 ºC. This makes possible the expression of a large amount of fermentative aromas that
increase the typical fruity character. Aging on fine lees for about 2 months and 3 months of refinement in steel.
BOTTLING AND DEVELOPMENT
Sterile under pressure of nitrogen. It is a wine of good structure and body and itsfruity character is best appreciated within 3 years of marketing
