MONICA
It is another of the vines of the Sardinian tradition, of which we have references since the time of the Aragonese presence in Sardinia (about 1325 AD). It is widespread in the island for its great
adaptability to different pedoclimatic conditions. A vine of medium-high vigor, it has a fairly developed cluster, winged with medium-sized berries. The skin of good thickness is black-violet,
not always of intense shade. The plantresists well to cryptogams and matures between the second and the third decade of September.
TASTING NOTES
Bright red color; the characteristic scent is that reminiscent of the time of racking in the cellar, along with berries and in particular blackberry. The taste is immediately soft, and the persistence
is accompanied by sweet tannins that make it an easy and pleasant wine to drink.
Alcohol: 12,50% vol.
Serving Temperature: 16-18° C.
IT’S BEST ENJOYED WITH…
First coursesseasoned with meat orsemi-mature cheeses; roasts and medium-aged cheeses. Also good with pizza and with fish fat, cooked roast or with tomato sauce.
THE VINEYARDS OF COLLE MORESCO
Vineyardslocated in the hillsin the municipality of Mogoro and neighboring countries. The soil is deep loose, calcareous-clayey and calcareous-siliceous, partly composed of quaternary sands.
The climate is Mediterranean with mild winters and very hot summers. Average annual rainfall 500mm. The harvest is manual with mashing of the grapes within a few hoursfrom the harvest.
The yield per hectare is 70/80 q.
VINIFICATION AND AGING
Made of steel, with controlled fermentation temperature and use of selected yeasts. After malolactic fermentation it ages for 6 months with batonnage on fine lees.
BOTTLING AND DEVELOPMENT
Sterile under pressure of nitrogen. It is bottled not before the month of March following the harvest. Pleasant from a young age, evolves and featuresthat make it very pleasant even after two years. It is important to keep it in optimal conditions.
