La vendemmia viene effettuata manualmente utilizzando
le cassette di plastica per il trasporto.

VINIFICAZIONE
Dopo la pigiatura ed una prima pulizia vengono
inoculati i lieviti ed il mosto fermenta a tempe-rature
intorno ai 12 gradi per circa 2 settimane. Ultimata la
fermentazione il vino sosta con le fecce fini per circa 4
mesi.

Vino straordinariamente longevo si abbina molto bene
a formaggi erborinati, antipasti di mare, primi e
secondi a base di pesce o frutti di mare
