Autochthonous grapes.
Anastasìa is a pre-Nuragic temple located in Sardara, a village near Mogoro, in one of the most suitable areas for the ideal growth of the vine.
TASTING NOTES
Pale straw yellow, bright and with brilliant reflections. The perlage of good persistence comes from the Charmat method. It has delicate aromas of freshly baked bread crust, white fruit and aromatic herbs. The attack is fresh, the aromatic progression delicate, the finish pleasant and dry.
Alcohol: 12,50% vol.
Serving Temperature: 5-6° C.
IT’S BEST ENJOYED WITH…
It is an excellent aperitif but can accompany menus with delicate flavors, from sautéed and fragrant crunchy vegetables to fresh herbs, even raw, cold rice salads, as long as no pickles or garlic.
THE VINEYARDS OF ANASTASÃŒA BRUT
They are located in the area of Mogoro, on medium calcareous, loose and deep soils, partly consisting of quaternary sands. The climate is sub/arid with mild winters and very hot summers, mitigated by the salty mistral wind. The average annual rainfall is 500 mm. The harvest is manual with mashing of the grapes within a few hours from the harvest. The yield per hectare is 80/90 q.
VINIFICATION AND AGING
Short skin maceration of the must on the skins. Control of the fermentation temperature and use of selected yeasts. The foam is obtained by slow fermentation at a temperature of 13 ºC, through the Charmat Method.
BOTTLING AND DEVELOPMENT
It’s a delicate and fresh sparkling wine: its characteristics are best appreciated within one or two years of its marketing. Optimal storage conditions are essential.
