Autochthonous grapes.

TASTING NOTES
Sparkling wine obtained by a slow and accurate refermentation in autoclave of 90 days. The persistent foam is characterized by vibrant purple hues and the wine shines in the flow of fine and persistent perlage. The nose releasesintense floral scents and red fruit accompanied by slight hints of bread crust given by aging on the lees of noble wine. The taste is pleasantly fresh and savory. The good body is accompanied by a balanced acidic vein.
Alcohol: 12,50% vol.
Serving Temperature: 6-8° C.

IT’S BEST ENJOYED WITH…
It is advisable to consume it as an aperitif. Paired with typical Mediterranean appetizers.
Excellent companion of fish dishes and white meats little seasoned.

THE VINEYARDS OF ROSÈ BRUT
They are located on sandy soils. The harvest is concentrated in the last ten days of August and the first of September and is carried out entirely by hand. The grapes harvested in the cooler hours of the day are soaked within a few hours of being placed in the cellar.

VINIFICATION AND AGING
The must is obtained by means of the bleeding technique that allows to obtain a slight pinkish color with slight violet reflections. Fermentation is carried out at low temperature and with the use of selected yeasts. At the end of fermentation, the consumption of the last sugar residues is destined to the fermentation and to obtain a pleasant and fine perlage. Then the wine remains for about 30 days on its noble lees to encourage the increase of body and structure.

BOTTLING AND DEVELOPMENT
Sterile under pressure of nitrogen. It is advisable to consume it within one or two years after bottling.
